It's fairly simple really.
Most smart devices are 'always on' and contain a microphone to listen for commands. The only thing they need is our permission to to do so which we give freely when we install an app, buy a model of phone, buy an Alexa or Nest or click 'accept' on those annoying cookie pop-ups.
